About the Research Project
The DBT-funded research project focuses on understanding the molecular and functional characteristics of plant proteins and developing innovative techniques for producing sustainable meat analogues.
Plant-based meat alternatives are designed to reproduce selected characteristics of conventional meat products using plant-derived ingredients. Developing these products requires research into protein functionality, food processing methods, texture, structure and other product characteristics.

Essential Qualification
